
So although some of you are already experiencing winter - we are just starting Fall in Boise - and with Fall - comes all my favorite pumpkin recipes. I thought it would be great if everyone shares their favorite, tried and true, pumpkin treats.
Here is one of my favorite pumpkin recipes. These muffins had a cult following while in law school and were requested at every bake sale and early morning event.
Pumpkin Chocolate Chip Muffins (from the Cake Doctor):
Pre-heat oven to 400 degrees
Ingredients:
1 package (17.8 ounces) chocolate chip muffin mix
1 cup canned pumpkin
1/2 cup of milk
1 large egg
1/2 teaspoon pumpkin pie spice
Place mix in bowl - make a well in the center. Place the pumpkin, milk, egg and pumpkin pie spice in the well and stir the we ingredients with a fork to break up the egg yolk. Using a wooden spoon, mix the wet and dry ingredients together until combined - about 20 strokes. Spoon batter into prepared, greased muffin tins.
Bake for about 20 to 22 minutes.
