Salads, Salads, Salads

James has left his old favorite foods, steak and baked potatoes behind and for the past 8 months or so, eats mostly only soup and salads.  He doesn't get too excited about the old standby of lettuce, cucumber and tomatoes, so I elected to make us a different salad every night.  This compendium of salads is the perfect place to go to.  Each salad only has 3-5 ingredients, making them simple and doable and providing a lot of variety.  I actually posted these salads on the blog in 2009, but their goodness factor hasn't declined. I'll share one surprising favorite here--
The Carrot, Blueberry, Sunflower Seed Salad.  
It is pictured in the top center.  Grate carrots, toast some sunflower seeds, and toss with blueberries, olive oil, lemon juice and plenty of black pepper.  Sweet, sour, crunchy, soft. This salad was a huge hit!  And the complimentary colors of orange and blue just make this salad visually pop!
