I love cooking from anything from the Barefoot Contessa, Ina Garten. There is something about her recipes that are simple, but elegant and very flavorful. For April I've chosen two of her recipes:
Scott's Short Ribs
Chocolate Ganache Cupcakes
I'm really loving short ribs lately, but have only tried cooking them one way. They are such a weird piece of meat, but transform into tender shredded pieces of yumminess if you cook them for a long time. And I really like fennel, so am excited to use it in a new way. This recipe does require a longer cooking time, but I'm thinking you might be able to stick them in the crock-pot after some prep? You can substitute a diluted cran-grape juice in place for the wine.
For dessert (either with the short ribs or another time) - chocolate ganache cupcakes. Ina swears by the instant coffee powder she puts in (here's a little video of her making them.) Not that it tastes like coffee, but just enhances the flavor of the chocolate. Oh man, this is starting to sound like a Word of Wisdom challenge, sorry about that. I think it will be so fun to see all the different approaches.

As far as next month goes, I think we should just take volunteers. Some months are busier for each of us, so who wants to choose in May?

This same cake recipe is in the cookbook I have of hers--without the coffee powder so I'm sure it will be OK without. It hardly seems worth it to buy for a teaspoonful!
ReplyDeleteThat short ribs recipe looks REALLY hard. I dont think I have ever made anything that hard before (what is kitchen twine? what if I dont have a dutch oven? I dont even know what fennel is...maybe we should have a beginner class)
ReplyDeleteMom, you can buy coffee in individual packets. OR better yet, when you are on your trip, steal the coffee they put out in your boat room. As for the word of wisdom, it just says "hot drinks" it doesnt say ANYTHING about cupcakes :)
