Veggies for breakfast

If I eat veggies for breakfast I'm more likely to eat them the rest of the day. This does take more time than cold cereal and I only have time to make this once a week but when I do I feel so good.





Start with meat (optional): bacon, ham or sausage. If you don't use meat, make sure you grease the pan with butter or Pam.




Add veggies. I used red onion, purple potatoes from the night before (already cooked) and spinach. I also love to use peppers and mushrooms.
First add onion and potatoes (or peppers and mushrooms):



Then throw in spinach or other leafy green (kale and swiss chars would work too) and cook until wilted:



Add two eggs. Or of you are trying to be really healthy use egg whites or egg beaters. Mix it all together and cook until eggs are done. Season with salt and pepper.

And then, the one ingredient that elevates the whole thing from just being healthy to being really delicious: cheese. Pull out the best cheese you have. Something really flavorful like parmesean (no green can, something with flavor!), feta, white cheddar (basic yellow cheddar not good enough). Cause here's the thing, by using really good, flavorful cheese you only have to use a little, like a tablespoon or two and then it doesn't mess with the healthiness of the dish. In these pictures I used gruyere. Just grate a little on top. Eat with toast or a tortilla. Yum.
