Cupcakes at Dad's 70th Birthday party


Happy 70th Birthday Dad.  All of the kids were able to be there except Rebecca and Sean.  The menu included ham, smoked salmon, crackers, cheese, vegetables, fruits, clementines, Marilynn's rolls, and CUPCAKES!

Erin spent a week making different varieties of cupcakes and perfecting the recipes.  I think she made over 200 cupcakes.  They were really amazing.

Cupcake Recipe:
Betty Crocker Cake Mix Cake Doctored Up

  • Betty Crocker Cake Mix
  • 4 eggs
  • ½ cup milk
  • ½ cup oil
  • 1 cup plain yogurt
  • 1 large box pudding mix 5.1 oz. (6 ½ cup servings)
Cook the cake a little less time than it says on the box.


Vanilla Frosting:

  • 2 sticks softened butter
  • 4 cups powdered sugar
  • 2 teaspoons vanilla
Mix on high with wire whisks til light and fluffy (can do up to 10 minutes in the kitchen aid).
Add milk as needed for proper consistency—only a small amount.

Chocolate Frosting:

  • 2 sticks softened butter
  • 3 1/2 cups powdered sugar
  • ½ cup cocoa powder
  • 2 teaspoons vanilla
Mix on high with wire whisks til light and fluffy (can do up to 10 minutes in the kitchen aid).
Add milk as needed for proper consistency—only a small amount.
