Remember when we did the grilled cheese month? That was fun. And I still am making grilled cheese variations every chance I get. This is the latest find - that I am so obsessed with that I have had 3 times within the last 3 days.
Ingredients:
Rye Bread
Mayo
Mexican cheese blend
Fresh salsa
Green and yellow peppers
Cook the green and yellow peppers in a little oil until they are soft. Butter bread - layer light mayo, cheese blend, fresh salsa (squeeze out juice) and pepper mixture. Grill per grilled cheese liking.
So good. Seriously.
When are we going to have another challenge?

I have to admit, it does sound like a weird combination. So of course I want to try it. What's in a Mexican cheese blend? Could I just use Monterey jack?
