Chocolate Ganache Cupcakes--Boston Style


We made these another day, actually they were our Easter Dinner dessert. We did NOT use the coffee in either the cuppy cakes, nor in the ganache. The cupcakes didn't rise a lot, so I would fill the cupcake pans fuller next time, since they didn't really make it above the wrapper, when they were cooked.
I had a lot of difficulty finding chocolate syrup. Our local grocery store didn't carry it. I had to go to a bigger grocery store, 20 minutes away to find it. The workers in the store thought they didn't have it and told me so, but they did! I got several cans, anticipating that I'd want to make these again.
The recipe was really easy. And dipping the cupcakes in the ganache was much easier than frosting them.
They looked pretty messy.
The cake is also a different consistency than you typically expect in a cake. But with the ganache atop, it really brings it all home.

The verdict from the family:
James: They're great, but they'd be even better if you could figure out how to put a cream filling inside.
Megan: The frosting was so divine, that I want to eat it on my oatmeal. I'm happy to find a chocolate dessert that actually fulfilled my chocolate cravings. I was done after one.
Jansen: Very chocolatey. Very rich, but not so overpoweringly rich that you couldn't have a second.
Janessa: Rich, but made you want to have more. I had 3 in one sitting.
Logan: Chocolatey. I wanted more, but it was too rich.
J.B.: 4 1/2 stars
Soren: 50 stars.
Lachlan: Messy (that clean baby wouldn't eat it; he didn't like how it kept getting his fingers messy!)

  1. I know - so weird - I cant find chocolate syrup either! I have been to 3 stores and none of them have it.

  2. i love the comments from the family! i thought the same about filling them fuller next time. and seriously you should try the coffee powder. i bought little packets and used just one and it makes them so yummy.

  3. I can't believe your stores don't have chocolate syrup--it's in the ice cream topping section at our store.
