Morgan's Attempt

Well I tried to complete both the ribs and the cupcakes. I made the ribs on Wednesday after work. I could not find spare ribs so I used some beef back ribs, Geoff told me later that I was suppose to buy pork ribs or something. Anyway I was suprised at all of the work that went into the ribs. We opted not to use the wine. It is something that Geoff asked me not to do becasue he know how difficult it is when you are addictied to something it is better not to bring it around. I used grape juice instead. I like being able to use the frest rosemary from my yard. I started making the dish at about 5:30 and it became a very late dinner when I got to the end. I ended up not cooking it the full 2 hours, and I was so hungry by the end of the baking process I did not take the time to boil the broth I ended up taking out the meat and eating that. Geoff said that it was had good flavor and like the taste of the rosemary in it. He ended up most of them. All in all it was an intresting idea next time I would buy the right meat and make sure I have a whole day to devote to the recipe.

The cupcakes I waited and made them on Saturday. I liked the idea of using hershey's syrup for the chocolate and a lot of the sugar. I did the same as megan and thought that they would rise more. I think that my problem here was the eggs I used large eggs and I did not beat them a whole lot I was using the paddle attachment and I think that I should have used the beater ones. It also did not seem to mix very well. I had to keep mixing it when I was pouring them into the pan. The chocolate Ganash was great I really enjoyed it. I had not made it before and I thought that it was great. I had plans to put this on many other cakes. Geoff said that they were good he took two bites and could not finish it. He said it was too rich. I like them I like all that chocolate but I am sure that when I am being a good diabetic I won't be able to indulge. All in all it was a good cupcake.

  2. I think you had the right kind of ribs--they were supposed to be beef--usually they are called short ribs, but maybe some butchers call them back ribs--who knows?

  3. awesome. i think i need to apologize for the long recipe. i didn't know how involved it would be, and i agree that it was too much work.
