I love this blog. I just read everyone else's post and it is so fun to see how we all cook the same recipe. Great idea!!
We made the dinner on Sunday. I have never cooked short ribs or bought them, I was surprised at how expensive they were. I loved chopping up all the veggies. I loved using fennel and leeks, things I never use. I was a little sad to see the veggies getting smaller and smaller as I cooked them down. When I put the meat and veggies with the herbs in the Crockpot I thought the smells were fabulous. After a few hours in there we were too hungry to really cook down the sauce. I loved the flavors, but after three helpings it got a little rich for me. We served ours with brown rice which I thought was wonderful. The nuttiness of the rice was a nice juxtaposition of the intense meat flavors. The meat was so tender with the sauce and vegetables on top it made for a delicious meal. James asked, "Can I take this meat to school for lunch tomorrow." I said, "You'd have to bring it cold, do you still want to?" He said, "yes it is sooo good!" That is the first time he has ever requested bringing something we had for dinner for school lunch. His lunchbox came back empty! David took the rest for his lunch too. He thought the flavors were wonderful. So even though the meat was expensive it was dinner and two lunches, not bad!. I did think it was time intensive and would only make it on a weekend.
The cupcakes were super easy to make, not too many ingredients. I also had a problem getting the butter fully Incorporated. The ganache was so super yummy! I would definitely make these again. They were moist and with the rich ganache on top a wonderful dessert! Yummy!!

james is so cute. what did he call corned beef, yummy meat or something like that? i did take extra time to skim the fat and boil down the sauce and i didn't think it made much of a difference. i love the idea of brown rice. so healthy!
ReplyDeleteThe brown rice was a good idea--I cooked potatoes to eat with the leftovers the next day and they were good with the rich sauce and meat. It sounds like it was a hit with your boys! What fun that we all made the same thing!! What good cooks you all are! I love you tons!!!
