New Year's Morning Breakfast

This breakfast was featured in the latest Sunset Magazine, so since some of the family members were coming over for sledding I made it for them to eat before venturing out onto the slopes. The fruit salad was really nice--it can include any combination of fruits--whatever is in season. The dressing is made by simmering 1 Tbs candied ginger in 1/4 cup water for a couple of minutes--then blend it, or chop the ginger fine in the first place, and pour over the fruit--it's not too strong and nicely compliments the fruits. I used oranges, pineapple, kiwi and bananas (as they suggested) plus some pomegranete seeds, but I think it would be very good with pears, apples, peaches etc.

The pancakes are a mixed grain buttermilk pancake--any good pancake recipe would work, but you need to separate the eggs, beat the whites until stiff and then fold them in to the other ingredients at the end. That makes them light and fluffy. The recipe called for 4 different flours, plus oatmeal--I just ground up some mixed grains I had, and added the oatmeal.

The really delightful discovery was the raspberry syrup---1 cup warm honey and a cup or so of raspberries (fresh or frozen)--I happen to have lots of bags of those in the freezer from last summer's harvest. It was really delicious on the pancakes!!
For those who wanted a more substantial breakfast I also made huevos rancheros.

It was a great morning--Ella and April had a great time playing in the snow with their parents.
