We really enjoy our butternut squash--this has become a favorite way of eating it--peel the squash and cut it into bite sized cubes. Put it in a pan with a tablespoon or two of butter and cook slowly (so the butter doesn't melt). Add some apple cubes about the same size. You can sprinkle with cinnamon. Continue to cook slowly until just tender. (When Dad makes it he also adds a bit of sugar.)
We have enjoyed this recipe for cauliflower for many years. You cook the whole cauliflower head in an inch of boiling water--or you can steam it---for about 12-15 minutes Drain, and put into a shallow baking dish. In small bowl mix 1/2 cup mayonnaise, and 2 tsp prepared mustard. Spread over the cauliflower. Top with 3/4 cup shreddded cheese (sharp if you have it.) Bake in a 375 degree oven for about 10 minutes, or until cheese is bubbly.
(I know that one point of eating vegetables is that they are low fat and this recipe just added a bunch of fat, but it's nice for a change. We also love raw cauliflower in salads, or just to snack on, but I thought that those of you who remember eating this as you were growing up might like the recipe.)

I make this recipe fairly often. I got it from a friend when I worked at the credit union. It smells SOOO good when it cooks and it tastes so yummy!
