Veggies for a non veggie eater...


I asked Matt what recipe he thought I should put on here that had to do with vegetables. My hot gardener responded that technically speaking, there is no such thing as a "vegetable" because what we describe as vegetables do not share a common characteristic (as compared to something like fruit that has a fleshy part you eat and the seeds inside).

Then Matt thought about it for a minute and said, "In fact, the only thing that vegetables have in common is that they all make you want to throw up when you eat them."

Yep...that is what I have been living with for the last 3.5 years - a non-vegetable eater. Especailly green vegetables. No matter how I make them or disguise them, he wont eat them.

He will eat corn - so we have incorporated corn into a lot of common recipes. Here is how we like to eat corn:

  • Mixed in a can of whole corn (or sliced fresh off the cob) with your mashed potatoes.
  • In cornbread (seriously...so good, creamed or whole corn works)
  • In our pasta dishes - this one being our favorite:
Cook some kind of pasta that can hold sauce, like macaroni, wagonwheel (this is actually called Wagonwheel Pasta, etc.

1 lb of ground beef (I actually use sausage)
1/2 of medium onion

Brown in a skillet - drain and add

1 can of condensed Tomato Soup
1 can of corn (NOT creamed corn)
1 package of spaghetti sauce mix
1 and 3/4 cup of water
pepper

Bring to a boil and then let simmer for a couple of minutes until heated through. Toss with the pasta.
