Rachael Ray's Smoky Tomato Soup


I love this recipe. And James LOVES this recipe. It's quick, easy, healthy, and the soup really has some kick! Despite the "fire" even Lachlan likes this recipe.
If you want to make a healthier version of this soup, just omit the smoked bacon and maybe use a tad more olive oil at the beginning when you cook your vegetables. Also leave out the cream at the end. You can either add 1% milk in lieu of the cream, or leave it out all together.

  3. I just realized that the reason that this recipe was so fiery was because I was using fire roasted tomatoes with hot chilis in them. they were the only fire roasted tomatoes I could find at the time. Now, I've found some without chilis. I'll let you know when I try it again.
