New Year's Resolutions Cooking Challenge

Erin asked me to post a challenge for this month. I thought in light of the New Year and resolutions that probably all of us had resolutions to eat more healthily (since that is the #1 resolution of the nation!)
This month's challenge is VEGETABLES.

No matter what kind of eating plan you embrace, it undoubtedly embraces vegetables. We all need to eat more vegetables.
  • So post your recipes here about how you prepare vegetables.
  • Try a new vegetable dish and blog about it.
  • Tell us how you sneak (I mean integrate) more vegetables into your diet.
