5 Minute Ice Cream

Carol Oertli taught a class the other night on 30 minute meals. She had some fun recipes and ideas for quick and simple meals made from real ingredients--not a lot of pre-prepared things. The big hit of the evening was her first demonstration:
1 cup of whipping cream
1/3 cup sugar
placed in food processor (could use blender too)
Add 1 pound (4 cups) frozen berries
Turn on the machine for a few minutes until it is all mixed together and sort of stiff. It's the consistency of soft serve ice cream now--but you can put it in a bowl in the freezer for a little while and it will harden up. It was delicious and so refreshing! She used raspberries, but the original recipe called for strawberries.

One woman said, "I never have whipping cream on hand, I don't know what I would do with it." After she tasted this ice cream she said, "I would keep whipping cream on hand for this!"

  1. I made this tonight and it was SOO good. We didnt have enough strawberries so I threw in some blackberries and that sort of made it seedy...but it was still really good. I will plan on making this again and again (p.s. - we used the blender and it was fine although it took a long time to chop up all the strawberries).
