St. George Chicken & Ramen

We tried Elizabeth's recipes about a week ago and they were a big hit! I liked that they were so easy, dinner really came together in about 20 minutes. I had some panko breadcrumbs, so used that on the chicken, yummy. Whenever I bread chicken breasts I have a hard time getting the center cooked and not burning the outside. These breasts were pretty thick, next time I think I'll take a mallet to them and thin them out a little. Petrea, who usually doesn't eat meat, loved the chicken.

I thought the noodles would be really saucy, but they really soaked it all up. Colin said, "I like the peanut butter you put in the noodles." Roxcy's said she loved the whole meal but her favorite dish was the broccoli. It was sweet and tasty.

Jonah asked if we could have it again.

After dinner I had Roxcy make the chocolate cookies. She did a great job. I loved that they were easy enough she could do it all by herself. She packaged the extras up and took them to school the next day for the 4th grade swap meet. (They went really fast.)

It was a really fun group of recipes to try. Very kid friendly, the kids loved helping and eating.

  1. oh - that made me feel all warm and fuzzy inside. I get what you mean about chicken and breadcrumbs though - I never can get it cooked through without burning the breadcrumbs.
