Boston Makes Elizabeth's recipes

First of all, Elizabeth, I liked getting to know a little bit more about you and Matt via this cooking experience. I found out that you plan ahead. You make a shopping list based on your recipe choices for the week. You shop, and then you and Matt are both capable of cooking, and whoever gets home first does the meal. I was impressed with this. Despite the fact that you're working full time, you have not fallen into the trap of eating out all of the time. You have a plan, you are prepared, and it pays off. (And you save a lot of money!) Kudos to you!
The meal was a big success at the McQuivey household. Many of my children are picky eaters, but they all like ramen noodles, so they were excited and mostly scared to see what I was going to do with the ramen to transform them.
They all liked the sauce on the ramen--the pickiest children included: Jansen who quite liked it, J.B. liked it OK, and Soren liked it alright.
I thought the idea of putting the flavoring packets in the breading of the chicken was a great idea. I used chicken breasts that were 3 times the size the recipe recommended. Would like to try with smaller breasts or tenders next time. It took a long time to cook these babies through.
I did not read the recipe very carefully, and I messed up by putting all of the flavoring packets in the bread crumbs. Since I was 1 1/2 timesing the recipe I got the whole family involved on this major math problem to help me figure out how many MORE breadcrumbs I needed to add to the breading mix since I'd accidentally used all of the ramen seasoning.

The cookies were easy and quick. We made them for Jansen's choral concert refreshments. They were OK good, but I probably wouldn't make them again unless I was really tight on time. They seemed kind of hard or tough. Maybe it was because I used butter instead of oil?
Thanks for sharing these recipes Liz. We'll definitely make the chicken again. It's always miraculous to find something that everyone in the family will actually eat.

  1. Yeah...when I remade the cookies they were not as good as I remembered them...they just dont compare with the other chocolate cookies we have in our arsenal.

    I am glad that your picky eaters were good with the ramen and sauce...it reminds me of Thai food...maybe Jansen will go to Thailand?
